No Bake Energy Bites

I was extremely lucky during college to have a job that compensated my room and board, but that meant I was subjected to college diner food and a residence hall room that was equipped with a mini fridge… which didn’t always allow for healthy, creative, scrumptious cooking. 

Which is why I’ve been ecstatic to cook and prepare all of my own food since arriving to New York. I look forward to grocery shopping and trying new recipes just to see what I can come up with!

I’ve experimented with chicken cordon bleu, whole wheat spaghetti with meatballs and spinach spaghetti sauce, fruit spinach smoothies, brown rice stir fry, baked chicken and vegetables, and so much more…

Over the weekend, in addition to a fantastic 5k with my fiancé and an eight-mile long run with Team RWB, I decided to try a “No Bake Energy Bite” recipe that was passed on to me by a friend.

 My fiancé and I loved them, so I decided  to share the recipe with the world along with some easy modifications to make the recipe healthier. 🙂 

 

No Bake Energy Bites

1 cup of dry oatmeal

2/3 coconut flakes (I used all natural coconut flakes)

1/2 peanut butter (I used all natural peanut butter)

1/2 ground flax seed

1/2 chocolate chips (I used dark chocolate chips)

1/3 cup of honey (I would recommend using less honey)

1 Tbs. chia seeds

1 tsp. vanilla extract

 

Mix all ingredients together in a large bowl. Once the ingredients are completely mixed, place the bowl in the fridge for approximately half an hour. Afterwards, roll small balls about 1 inch in size and store in an airtight container in the fridge.

Now, I’m unsure about what’s a “serving” size of these tasty little treats, but I’m going to assume 2-3 is a safe bet depending on how large you make them. I had to be careful because I could easily eat so many more… they were so good.

 In addition, I’m currently working to cut out processed foods from my diet, and found that this recipe is a appealing option without jeopardizing my new goal! Every single ingredient is clean and process-free except for the dark chocolate chips I currently have in the kitchen.

 The next time I make these I plan to replace ¼ of the peanut butter with a mashed banana and to decrease the amount of honey used, and will be sure to let you know how they come out.
